Easy Tuna Pasta Salad

I  was thinking about what my daughter had made for lunch yesterday - 'Tuna Pasta Salad' she had mentioned. It is a recipe that I thought, is good to share as It is both easy and yummy. While  kid friendly, it could also be a time-saver when you run out of time and need a quick fix. I am sure her cousin Kit will try this out one day..😄😄 and Hei will assist along. Not much cooking needed other than the cooking of pasta which she did with the help of the microwave oven..(*like me she is a microwave fanatic)..








Ingredients:

1 cup pasta (*penne/macaroni/fusilli/farfella)

2 tbsp salt to cook pasta

1 can tuna (drained)

4 ripe tomatoes or several small ones - diced

2-3 tbsp of mayonaise

Freshly ground black pepper (* amount adjust to taste accordingly)

1 small red onion - diced

2 hard boiled eggs -wedged

A squirt of lemon

Some parsley or spring onion


Method:

1. Cook the pasta in microwave oven for about 7 minutes ..check if it is al dente (*add the 2 tbsp of salt into the water for pasta)..drain when done

2. Open a can of tuna (drain the brine)

3. Pour in the tuna and add 2 tbsp of mayo, mix the entire contents well.

4. Pour penne into a big bowl, add diced tomatoes and onion to the pasta and mix it lightly.

5. Add in desired amount of black pepper and a squirt of lemon.

6. Once assembled, randomly place the hard boiled eggs and sprinkle some greens (spring onion & parsley)

7. Served as a main or side...
