Noodle Soup JB style @ 面面汤 @ Noodle soup

Noodle soup @ JB noodle soup, Yi Jiong mian mian tang...This is my kids' childhood food (Comfort food). They were introduced to this when they were very young, around primary school age. Their Yi ma ans Yi jiong will bring them to JB for a day trip and they first tasted this and loved it. I quickly replicate it at home and it quickly became their often lunch when I was so busy juggling them, house chores and what not.

It is in a way, a very comforting food..warm, easy and fills the stomach, balance with carb, protein and vitamins..

It has been so long since I remember this as these days the 'kids' taste bud level up..was telling no. 2 we shall cook this but just no opportunity..

Today, I 'lock' myself home and refrain from going to the market..Rummaged through the fridge and freezer, found all ingredients I can cook this..feeling happy as I am also clearing some food from the fridge..

The Ingredients at a glance (for 1 to 2 pax)

Yellow Noodles - 200g (can use bee hoon or kway teow)
Few stalks of long chye sim
A handful of beansprouts
2 eggs
10 prawns (shelled)
1 to 2 pcs of deboned thigh or breast or fillet
1 box of Heinz chicken stock ( less salty this brand)

The How to do:
1. Blanch noodles in hot water, no need to boil, just pour hot water over it , few minutes and drain.

2. Cut chye sim into 1 inch stalks, wash bean sprouts

3. Bring stock to boil, add 2 to 3 cups hot water and adjust the taste .

4. Wash chicken thigh meat with salt and drain. Sliced into pieces or bite size slices (not too thin slices)

5. Season chicken with 1 tsp oystersauce, half teaspoon of light soy sauce, splash of sesame oil and a dash of pepper, mix well and add in a tsp of corn flour and finally seal it with a tsp of garlic oil (will show how to speed make garlic oil)

6. Bring to boil stock, add in chicken and cooked till tender. Remove chicken pieces and add in prawns, once pink, remove and set aside.

7. Arrange noodles in a bowl.

8. Blanch the greens, the bean sprouts, arrange them on top of noodles alongside chicken and prawns..

9. Carefully place an egg into soup and depend on the type u prefer, we prefer runny yolk.. scoop it up carefully, place on top of the ingredients.

10. Lastly, ladle soup over the bowl of noodles.Top with fried garlic, cut chilli or our house favourite crispy prawn chilli..

Enjoy the comfort food. By the time, I m done with blogging, the kid who ate this, feel very full and told me she couldnt find this in school..as her meals are all taken in sch during her school days...I asked..mummy go sell this in your school...😆😆😆
