Ssam - Korean Pork Wrap
Ssam (Korean: 쌈; lit. wrapped) are dishes in Korean cuisine where one food is wrapped in another. A common variety is meat such as pork wrapped in a leafy vegetable.[1] It is often accompanied by the condiment ssamjang and can also be topped with raw or cooked garlic, onion, green pepper, or a banchan (small side dish) such as kimchi.[2] Ssam is usually bite-sized to prevent spilling of the fillings.[3]
I am never a big fan of Kimchi, until my boss introduced me to this house made kimchi.
Not the usual sourish Kimchi but fell in love 'Instantly' when boss suggested to just pair with rice and a fried egg. Indeed she is so correct. I am addicted indeed.
Thus I ramaged through my freezer for some pork I had bought weeks ago but yet to have time to cook.

I used Round Hind in this recipe.
Ingredients
250g Pork (Sliced as thinly as possible)
50ml soysauce
4 tbsp Gochujang (korean pepper paste)
2 tsp Ssamjang (seasoned bean paste)
3 tbsp brown sugar
1/2 apple grated
10 garlic whole
Ginger 1 knob - minced
4 tbsp sesame oil
Dash of black pepper
1 tsp mirin
8 stalks of spring onion (cut into sections)
1 white onion (sliced thinly)
Lettuce (Used Romaine lettuce today)
Some Ssamjang
Kimchi (important)
Method:
1. Sliced pork as thinly as possible.
2. Grate the apple and add to pork, rub grated apple into the pork.
3. Add in gochujang, ssamjang, brown sugar, sesame oil, soysauce, sesame oil, mirin, pepper, ginger minced to marinate the pork, rub into the pork till well coated.
4. Add in garlic whole, spring onions and sliced onions, marinate well till the onions and spring onions become soft.
5. Seal in container and marinate in fridge from 2 hrs to a day (think based on my observation, the longer u marinate..the meat gets too tenderized, so go for 2-4 hrs will do)
6. Placed it on grill and brushed the pieces of pork to grill till cooked..
7. Served hot in lettuce and Kimchi with a dolop of samjang.
8. Can served along white rice, sunnyside up and kimchi.
