Spinach Stuffed Chicken Breast
Was looking for a quick and easy way to cook a few chicken breasts.
My usual way will be to season the chicken overnight and grilled or Air Fried it till brown..but too boring I thought. So here goes the easy option...and yummy too..guess gonna cook this very often..😄😄
Some tips before anything else...
*Defrost chicken breast with some salt and vinegar in warm water better than leaving it outside for hours..it works
*Brine chicken breast overnight to yield a more tender chicken breast..
(Soak in salt water -Brine)
But adjust the seasoning rub on the chicken breast incase it is overly salty.
This dish looked tedious to prep but trust me..very easy and most important of all fuss-free
Ingredients:
3 skinless chicken breast (lately I purchase fr CS halal chicken breast @ $10.90 for 3 pieces.
3/4 cup baby spinach (u can add more according to preference)
4 medium size washed potatoes
1/2 zuchinni
10 cherry tomatoes
Some baby spinach leaves
Butterhead lettuce
Balsamic Vinegar Dressing
For combining Spinach
50g Cream cheese (use block ones)
2 tbsp of mayo
A pinch of salt
1 tsp of minced garlic
Dash of black pepper
Marinate of chicken
1/2 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
1/2 tsp dill (optional)
Method
1. Brine Breast overnight in salt water and wash and drain and pat dry wuth kitchen paper.
2. Place chicken breast on chopping board and slice sideways for a deep pocket, scoring the inside to enable it to cook faster.
3. Drizzle olive oil over chicken and rub inside out, sprinkle chicken marinate on the outside and rub it in so that it is flavorful when baked
4. Wash and dry spinach and roughly chopped them.
5. In a bowl combine the cream cheese, mayo, pepper, pamersan cheese and salt.
6. Mix in the spinach and add in any cheese u prefer, I used 3 cheese and mozerella.
7. Mixed well the spinach and cheese, stuffed the contents into the chicken breast using tongs as u can pressed it in to prevent it from dropping out.
8. Put in Air Fryer to bake at 350 deg for 20 mins and do a check, insert a skewer to check doneness.
Further heat till it turns brown and juice seeps through the chicken breast.
Served with baked veggies and a cold salad
