Fried Hokkien Prawn Noodle (revised post) March 2024
This dish is my baby, no. 3rd kid's favourite. I am cooking this because she was home for term break. Despite her break, her very busy schedules, only allows her home for a decent meal half the time..😰
Thus, I seized every golden opportunity to cook for her and just hoping she will be able to 'whack' down at least 2 plates 😁😁 ..She did because she was famished..😅😅
Here it goes, I had used a new sauce this round (as shown in picture)..Fried Hokkien Noodle Sauce from Prima Taste..
Here's the ingredients
I packet of Hokkien Noodle Sauce
400g yellow noodles
2 pieces of instant bee hoon (soaked in cold water)
200g bean sprouts
300g or more belly pork (boiled & sliced thinly)
500g of fresh prawns ( head removed for stock) bought swa lor prawns - only$12 per kilogram)
3 eggs
A bunch of spring onions or chives ( cut into 1 inch parts)
1 to 2 tsp fish sauce
2 tbsp minced garlic
Pepper
Lard - $2 , washed and cut into cubes ( fry immersed in water and a bit of oil, with slices of ginger, pandan leaves or whole garlic)
The How to??
1. Heat 2 tbsp oil add minced garlic fry till fragrant and put in two eggs, let it set a bit and break them up.
2. Add in the noodles then the soaked bee hoon, give it a good stir fry. Add the fish sauce to give it a umami taste
3.Into 4 minutes, pour half a bag of sauce, mix well, pour in sliced pork belly and prawns
4. Continue frying, add sauce along the way, gauge how wet you want the noodles to be..cover to braise the noodles.
5. Cook until u get the consistency, throw in beansprouts and spring onion, stir fry awhile and ready to serve
6. Serve with store bought balachan and lime.
