Hae Bee Hiam @ 虾米辣 @ Spicy Shrimps


Specially dedicating this blog on Hae Bee Hiam to a friend I have yet to meet..Michelle & Gang and also Jasmine my dear friend..


This is my second time cooking this after a too difficult, just a bit of prep work. 

I have stumbled across this recipie from The Meat Men and it was such easy to follow recipe.Thankful..

Here, I thought I shall rewrite the recipie to the simplest form as I would like it to be..so that it can be embedded into my brain..without checking recipe in future.




INGREDIENTS at a glance

400g dried shrimps (Grind or pound)
30 pcs shallots or small onions
15 pcs dried chilli (soaked and cut into pcs for grinding)
10 pcs fresh chilli (cut into pcs)
6 pcs garlic
6 pcs candle nut (buah keras)
1 tbsp toasted balachan
2 tbsp or more gula melaka or sugar (adjust according to taste)
2 pcs of dried assam (optional)
1 tsp of fish sauce or 1/4 tsp salt
6 tbsp oil 

METHOD:
1. Soak the dried shrimps for 30 mins or more. Drain it and set aside.
2. Grind the soaked shrimps till the preferred texture (see pic
3. Grind shallots, chilli, buah keras into a paste (no need add water)
4.Heat up 6 tbsp of oil, fry the rempah till oil flosts, using small fire until u can smell the fragrance of the chilli.
5.Put in the ground dried prawns. Fry till the rempah is well mixed. 
6. Add the toasted balachan, the sugar or gula melaka and a dash of salt or fish sauce. Add in the dried assam skin and continue to fry.(remove them when done).
7. Add oil if you find it a tad too dry and never add water. Use more dried chillies & some chilli padi to get a spicier vesion.

Enjoy with a bowl of white rice..
