Basil Pork @ Pad Kra Pao


Always love Basil Pork stir fry, simple and delicious.
I prefer minced pork to chicken but it should be the same - Simply delicious.
Today I really cooked a very small portion as that was what I had left in my freezer. (Improvised version)
As for the basil, must thank my bro-in-law, Ringo for bringing the plant over for us to grow.
I literally cut the basil leaves freshly  from the plant.

Ingredients

150g minced pork
A bunch of basil leaves (12 leaves)
2 tbsp minced garlic
1 tsp or more of Thai crushed chilli prawns flakes
(2 chilli padi minced would be a better choice) - I ran out of chilli
2 tbsp oil 
1 tbsp oyster sauce
1 tbsp light soy sauce
(I used thai golden mountain sauce)
1/2 tsp sugar

Method

1. Wash or soak basil leaves in water, wash clean, stack and roll them up, slice thinly.

2. In a wok heat up 2 tbsp oil, put in garlic and chilli flakes, fry till fragrant, watch out for fire, do not burn the garlic.

3. Put in the minced pork, turn up the fire, fry till cooked and fragrant.
Add in the seasonings and mixed well.

4. Put in the shredded basil leaves and fry, mixing well, add 1-2 tbsp water, mix and off the fire.

5. Dish up, serve over white rice and a fry Sunny side up.
