Sharing Kenneth's Easy butter cake...
Was craving for butter cake while waiting to catch a bus home...thus texted daughter to take out a block of butter from the freezer..and started to revise a bookmarked page from Kenneth Goh, a very well-known blogger..did not start baking until 9 plus but trust me the 2 dozens muffins were baked under an hour plus washing..and of cause by the Air-fryer.

Ingredients: (25 muffins)
250g butter
280g self raising flour
160g sugar
100ml condensed milk
100ml fresh milk
100g cranberries (dusted with a tbsp of flour)
1 tsp vanilla essence
4 egg
25 muffin cups

Method:
1. Cream sugar & butter till light & fluffy.
2. Add in eggs one by one gradually
3. Add in vanilla essence
4. Add in condense milk
5. Sieve 1/3 of flour and fresh milk intoo mixture and give it a good stir, repeat until all flour & milk have finished & stir in the cranberries.
6. Prepare the muffin cups and fill them till 3/4 full.
7. Bake at 140 deg and adjust the temperature accordingly. (Around 15 min)
(The good thing about using the air-fryer is you can pull the drawer out to check the doness of the muffin..stick a skewer, done when skewer comes out clean
