Braised Pork Leg @ 焖猪脚

Specially attempted this dish for my dad who loves pig trotters...& also is Father's Day tomorrow..we are having family dinner tonight so cook in advance for him .Was apprehensive at first despite having bought the trotters already and is deemed to cook no matter what..bought the front trotters as butcher uncle says more flesh..bought mine from Tiong Bahru market..stall 286..reliable source..
As usual browsed through the website and trying to get an easy recipe to follow but found it very cumbersome to follow as most recipes called for cinamon sticks, star anaises, bay leaves, five-spice powder etc...all these I don't have.😄😄
Thus I have to come up with my easy, as usual easy, basic ingredients I can find in my kitchen...

Ingredients..

1 Pig trotters @ Pig hand preferably (cut into chunks)
8 pcs dried shitake mushroom ( soaked)
8 pcs garlic smashed with skin
4 tsp sugar or a small pcs of rock sugar
2 tbsp sesame oil
2 tbsp oyster sauce
1 tbsp gd quality dark soy sauce
2 tbsp gd quality light soy sauce
5 slices ginger
Pepper
Cilantro and spring onion to garnish
*add a red chilli to the stew if able to take hot.


Method:
1. Blanch the trotters in hot water for 2-3 minutes.
2. Heat up wok and caramelise the sugar..control fire well here..you only want a light brown caramel as too high heat will leave u with charred and bitter caramel..
3. Throw in all the garlic and trotters.Give it a good mix and add in 2 tbsp of sesame oil and up the fire to fry till fragrant.
4. Add in the black sauce..stir fry for awhile, and the oyster sauce and the light soy sauce..Fry for a further 5 mins till all sauces and trotters are well mixed.
5. Add enough water to slightly cover the trotters.
6.I m using pressure cooker so turn to cook meat function and cook on medium high fire for 20-25 mins ( check at 20 minutes time slot)
