Easy Lemon Muffins
Was craving for cakes this morning so I kept Calm & baked a batch..Adapted this very easy recipe from

It is such a fluffy soft cake and best of all you can bake all within an hour or less I should say..and of course I used the airfryer..
Without looking at the original recipe, I will just write down what I can remember of the ingredients & method..I did some adjustment to the amount of sugar & lemon juice but again as you baked along the way, finetune the recipe and you will use it for a long time..
Thought I should blog this because it is such a no-fail recipe and definitely a keeper..
Ingredients:
250g butter
230g sugar
200g flour (sifted)
4 eggs
4 tbsp of milk
3 tbsp of lemon or more
Rind of 1 lemon
Method:
1.Cream butter & sugar till creamy & white.
2.Add in the eggs one by one and stir well.
3. Add the milk in and combine well.
4. Add in the lemon juice and the grated lemon rinds.
5. Add in the flour, stir well
6. Prepare small paper cups and spoon 2 big tsp of batter into it.
7.Bake at 150 deg in air fryer.
8. Check that it browns slightly and lower temperature to 140 deg..bake till done and tested with skewer..
