Butter Rice

Happy New Year..it has been awhile since my last blog..started the new year cooking a fair bit and one of the dish I wanted very much to attempt is Butter Rice..a dish that I remembered we cooked during our home economics class during our lower secondary days..
Finally found the chance to cook it on one of the weekends..it was definitely a hit with my family..it is easy, fast & delicious...I should have grilled some chicken to go with it but instead I opted fish as I want a quick meal...still thought chicken goes well with this rice..

Here it goes the how to...

Ingredients:
2 cups rice
2 1/2 cup chicken broth (i made mine using chicken powder & water)
3 tbsp butter
1 onion (diced)
2 or 3 spoonfuls of raisins (i used golden &  black raisins)
1 clove garlic minced
Dried parsley

Method:
1. Wash rice & drain, keep aside.
2. Heat up a non-stick pan and melt the butter over medium heat, add in the diced onion and saute till soft & fragrant but not burnt.
3. Add in garlic & fry a further 2 minutes
4. Add in the drained rice and fry in the pan for a further few minutes.
6.Transfer rice into a rice cooker, add the stock and cook as usual stirring once awhile till done.
7. Add in the raisins to further cook 5 minutes till raisins turn soft..
7. I used my microwave oven instead which I found it cooked much faster.

*My daughter no 3 gave me a tip..Add more butter as I fluff up the rice so that the aroma of butter blend nicely into the piping hot rice.

Sprinkle some dried parsley juz before serving...
