Gong Bao Chicken...宫保鸡丁
A dish that whets the appetite..It goes very well with rice..and trust me..it takes me very little time to cook this dish..especially so because I cooked this before I m off to work..
Ingredients:
Boneless chicken thigh (skinned) - 2 pcs
1 large onion..cut into squares
2 stalks large scallions or a bunch of spring onions (preferably thicker stalks)
5-10 pcs dried chillies (I bot mine fr supermarket in Japan...so fresh and not so spicy)
Roasted peanuts (buy off-the shelf)
2 slices of ginger
1 tbsp minced garlic

Marinate for chicken:
1 tbsp light soysauce
1 tsp oyster sauce
1 tsp sesame oil
Pepper
1/2 tsp sugar
1 tsp corn flour

Sauce:
2 tbsp zhejiang vinegar (black kind)
1 tbsp dark soysauce
2 tbsp sugar
2 tbsp water
1 tbsp corn flour

2 tbsp water
1 tbsp corn flour
Mixed the above for sauce.
Method:
1. Cut chicken into bite size pieces and marinate for at least half hour.

2. Cut scallions into 1 cm pcs..
3. Cut onion into square pcs
4.Heat up wok with 2 tbsp of oil and fry the garlic ,ginger & dried chilli till fragrant.
5. Fry the chicken pcs till cook, stiring it as u fry to brown a little more.
6.When almost done, throw in half the scallions and continue to fry.
7.After a minute or so, stream in the prepared sauce..stir frying the chicken pieces to coat well, add in the roasted peanut last to maintain their crunch..
8.Add in the balance scallions and dish up and serve hot with rice..p
