Zuchinni & Pepper Sphaghetti (Angel Hair)
Today I am gonna share an easy pasta recipe with you. When I say easy, it really means easy.
My ingredient list is adapted from left- over grilled chicken that I bought from Cold Storage (@$4.90 U.P $7.90 (I shredded the meat)..some zuchinnis, belle peppers and 3/4 pkt angel hair (found this sphaghetti cooks so easily as I needed just 3 minutes).
Found another convenient way to fry crispy garlic..with the help of microwave..minced garlic in mincer and fill a ceramic bowl with oil (I used avocado oil) just covering the garlic..it turned out so perfectly golden..I used the garlic oil to toss the pasta and remaining crispy garlic as toppings.
The rest is just a breeze and if you are really hard pressed for time, cook pasta the night before..I can humbly say I churned this out in 30 minutes..
Here it goes the how..
Ingredients:
1 pkt of angel hair (cook in 3 minutes kind)
2 zuchinnis (yellow & green) diced
3 -4 cloves garlic (minced) & fried
1/2 -1 whole roasted honey chicken (shredded)
3 small peppers (red, yellow, orange) diced
3 tbsp or less heinz mayonaise
1 tbsp avocado oil or olive oil or garlic oil
1 squeeze of lemon
salt & black pepper to taste
Dried herbs
Parsley
Chilli flakes
The How-to:
1. Cook pasta according to instructions on package.
2. Grill the diced zuchinnis and peppers in the air fryer.
3. Fry garlic in microwave till golden and crispy
4. Assemble the pasta in a deep bowl, divide them into 2 or 3 portions.
5. Toss the pasta with a table spoon of mayo and a little oil, add some shredded chicken, peppers and zuchinnis.
6. Further toss with herbs, chilli flakes, parsley and a swish of lemon..Flavour it with salt & black pepper.
7. If you are doing 1 portion, you can tuck in by now.
8. Repeat the 3 portions ( purpose of layering is to ensure in between layers of pasta there are ingredients). Top with whatever left over ingredients.
