Nasi Lemak Rice

Seriously, I m 'weak' against Nasi Lemak, just not a first choice when I needed to whip up a weekend meal for my family..Initially I gave the kids 2 choices, Chicken rice or Nasi Lemak? Hoping they would choose the former😰😅but they unanimously chose the latter..😱😱
So I kept calm and cook Nasi Lemak lor.. with the help from no 2..she was the one who helm the cooking of rice and I did the rest of the planning....
Got her to regurgitate the process...here it goes Auntie Geraldine😉😉
For a family of 5 plus (quite a good portion if you like nasi)..
。4 cups of rice
。Water..(she estimated and through our tried and tested method..water level should be 1-2 cm above the rice after washing)
。few stalks of pandan leaves (knotted)
。1 tsp salt
。 200 ml coconut cream (we used kara)
(Trick here is dilute 100ml of coconut cream into the water b4 pouring into rice)
the balance 100ml thick cream to be added to the almost cooked rice towards the end process.
**(read somewhere not to add thick coconut cream all at once as the oil in the coconut cream will prevent the rice fr cooking through)
We cooked our rice in the microwave oven thus we checked on the rice throughout the process and once it is 70% cooked we fluff up the rice and test the doneness of the rice..add a little water if the rice is hard but again this subjects to different types of rice used😰😰they have new and old rice which I cant differentiate😛😛
Use lesser water and add along the way helps because we dont want to make too mushy nasi lemak..
*add pandan juice to the water if you like green rice..😊
