Pepper Lunch @ Mummy's Kitchen
Has been telling my kids, I will cook Pepper Lunch for them one of these days..but that was many months ago..even the beef I had bought for this purpose had been transformed into another dish...Cottage pies @Shepherd's pie. I have good kids who will not pester and ask for promises that I have made but not delivered..
Today out of the blues, I have gotten hold of some really fresh beef flanks from Tiong Bahru market for just $10...when I sliced them up..it gave a real good portion and what more should I wait..told my girls..Mummy is going to attempt Pepper Lunch..I only heard a faint...'Okay, is okay, whatever you cook'..
Went on to google a bit, which I usually do before attempting dishes that I have not cooked for awhile..couldnt really get hold of one clear-cut recipe though...so I thought I will write out one so that I can refer to it when needed..

Went on to google a bit, which I usually do before attempting dishes that I have not cooked for awhile..couldnt really get hold of one clear-cut recipe though...so I thought I will write out one so that I can refer to it when needed..
All u need is less than 60 minutes...
First..
Cook 2 cups of rice the usual way, I did it in my microwave..
2. Slice my beef into thin slices..by using a very sharp knife, this is easily achieved.
3.Season the beef with 1 tbsp oyster sauce..some oil and lots of freshly ground pepper.
4. Defrost 1 cup corn kennel in hot water..drain it, add butter and set aside..microwave if u want buttery corn, add a bit of salt..
5. Heat up an iron skillet but I dont have one, so I heat up my HappyCall pan (which has been stored away) till smoke emits from the seams of the pan.
6.Scoop half a bowl of rice, tuck some corn in the middle and fill up the entire bowl, press the rice down hard and when ready invert the bowl into the heated-up pan & close the lid for 3-4 minutes..this helps achieve a crispy crust at the bottom of the bowl of rice.
7. Place slices of beef around the entire hot plate surrounding the rice..swish some oil on to the beef and allow it to sear through the heat in about 3 minutes, keeping track the fire, it should be hot enough to cook through the beef.
8. When done, open lift lid and invert the bowl into the rice and using a spatula, scoop up the rice from below and transfer it to the plate.
9. Stir fry the beef briefly & place them round the plate..top with more corn on to rice and garnish with spring onions.
10. Complete the meal with a bowl of miso soup.(kids too hungry..forgotten to snap pic).
11.Add the honey sauce accordingly..

1/4 cup honey
1/4 cup oyster sauce
1 tbsp soysauce
2 tbsp onion powder
1 tbsp garlic powder
1 tbsp oil
1/4 cup oyster sauce

Blend together..serve..
(I omitted adding water & corn starch as this version more gluey . I prefer the glaze version which I thought was passable

Verdict..My kids ..elated with what was served at lunch and with some praises too
