Olive fried rice - the easy way out
Hi hi..stay safe..stay well all...amidst worldwide pandemic..most of us who work from home..stay home...for whatever reasons..are scrambling to prep meals for the entire family..it can be so stressful if you are the only chef at home..I have a friend Karen whose family took turns to cook in the kitchen...her beautiful 13 yo daughter, her hubby Mr Tan..so blissful...Yes..Karen ...you..I m talking about👏👏🤗...Another friend Jacelyn..who is in charge of posting pics as cooking is done by the guys in the house..kudos..but your postings are also of importance as you inspire your friends to turn to cooking the exact same dish which otherwise would not think about..
After ranting so much..😂😂😂moral of the story is ' I m still the sole chef haha not sous chef of my family'..but Lady Luck is on my side today because my gals are taking over the kitchen today ..therefore I can blog my fried rice today😂😂😂
As part of my clearing fridge mission..I took a box of overnight rice..1/4 pcs luncheon meat..to cook today's easy fried rice..feeds 2 small eaters though...but again you can always up the portion..promise you..this is so easy..train your kids, then in no time..you can be like my friends

INGREDIENTS
1 big bowl of rice (preferably overnight)
1/4 pcs luncheon meat (diced )
A handful of small ikan bilis @ anchovies
2 eggs (1 to top the rice as sunnyside up)
3 cloves garlic
1 tsp dried shrimps (soaked)..optional
1 tbsp of olive veggie
1tsp fish sauce
2 stalks spring onions..(chopped)
METHOD
1. Put a tbsp of oil, fry the anchovies till golden, ..
shrimps and luncheon meat fry on medium high heat till brown...
3.Scramble one egg for few secs..do not beat the egg as I want a mix of white and yellow in the rice.
4. Put in the rice and break them up evenly..mix well with the egg and now put in that core ingredient..Olive veggie..give it a good stir..
5. When you smell the fragrance of the olive..shrimps..you can add the tsp of fishnsauce and up the heat..fry few more minutes and wala..can dish up and serve..
6. Fry a sunny side up and top up with fried anchovies..

(My kitchen smells so good as my 2 chefs are cooking steak for lunch but oh my God the entire house smells a bit oily..but vow not to meddle with them as today I decided to rest while they do the cooking..I must tahan tahan...so I decided to rest under the fan and cross my legs to blog...🤗😂
Above activities were ongoing when I blog my fried rice..haha..sometimes I need to let go...i shall ...i shall..i definitely will...
