Egg Parcel @ 蛋角


Pan fried egg parcel (蛋角) as my mum named it..another of my childhood dish that my mum made once awhile. A check with my husband found out that my mother-in-law too cooked these for him when he was young 😆😆😆thus concluding that this is definitely our era's childhood food...is easy but need patience and believe me..the more the merrier..😁😁😄

Ingredients:

10 eggs
200g minced pork
A bunch of spring onions
1 tbsp soy sauce
1 tbsp oyster sauce 
1 tsp sesame oil
1 tsp chicken powder
1 tbsp corn.flour
Dash of pepper

For the egg (seasoning)
1 tbsp soysauce
1 tsp sesame oil
A dash of pepper


Method:

1. Mixed all the seasoning into the meat and stir clockwise till combine, add the spring onions into it.
2. Beat the egg with the egg seasonings.
3. Heat up a non stick pan with some oil
4. Pour a small ladle of about 2 tbsp of egg mixture into the pan and before it gets cook, use a fork or a pair of chopsticks to put a small amount of pork into the edge of egg, not the centre as it will have to be folded over when half cooked..
5. Fry till both sides of egg are golden..serve hot with mayonaise or just with rice..
