Easy Pasta for Busy mums...

I am sharing this easy pasta dish today and my focus is on TLSan, my dearest friend for 2 decades. She has 2 lovely and highly active boys..who adore her cooking...thought this will pull her through 'rainy days' in case she needed a cook-and-go recipie..
Best of all, the boys can do it together with mummy!!

Easy as said, you could gather whatever you had left over from the weekend cooking and transform it into a main meal which delights both the old and the young..

Today, I have some endoki mushroom, asparagus, a handful of cherry tomatoes, few pathetic prawns and a small box of scallops from sister..that is all you need for this colorful pasta dish..
Infusing the olive oil with garlic...
Very important to pat the scalloops and prawns very very dry...

Throw in generous amount of italian mixed herbs, a good splash of chilli flakes and lots of garlic slices and using medium heat..to heat and infuse the olive oil with the garlic slices..

For pasta, use any kind you wish to but I prefer slightly thicker ones..

Here you go:

Ingredients
1/2 packet pasta (cook according to package instructions)
1 clove of garlic (slice thinly)
1 bunch of asparagus (I used the thin ones)
1 pkt endoki mushroom
10 cherry tomatoes
10 scalloops
8 prawns (wash and pat very dry, it saves your seafood swimming in a pool of juice)
Blackpepper
Herbs
Chilli flakes
Olive oil (adjust accordingly)
Salt

Method

1. Heat a big pot of water with enough salt.
Cook pasta accordingly & drained. (Leaving 1 cup of pasta water)

2. Heat up oil, put in the sliced garlic and fry them till golden brown.

3. Pat dry the prawns and scallops, gently slide in and pan fry till lightly brown. Pick them up with tongs and set aside.

4. Fry the slices endoki mushrooms follow by the asparagus and lastly the tomatoes..Stir fry for awhile till well coated with oil.

5. Season the ingredients with enough herbs and black pepper. Add more olive oil is needed.

6. Put in the sphaghetti and give it a good stir..test the doneness and the flavour..add 2 tbsp of pasta water if it is too dry.lastly sprinkle generous amount of chilli flakes..
