Japanese Curry @ 日式咖哩

Japanese Curry, a dish that never fails to brighten my girls up for the day...

It is also one of those food that I consider 'fast food' in my cooking routine... as it is really fast..

To my kids, Thai Green Curry, Japanese Curry, Red curry...all curries are almost being very welcome whenever I cook them...but this post is specially for ' Demi 'my sister's friend..if not for her..I am still procrastinating and will not know when I will blog this. I had always wanted to😄😄..Thank you  dear Demi..(by the way, heard from sister, she & her brother can cook very well too)..😁😁

All You will need:
1 box of Japanese curry paste (hot)* Japanese curries are usually milder so their hot is really alright
2 tbsp Japanese curry powder (Donki sells)*optional, you can skip this
2 tbsp oil
1 big yellow onion (wedged)
2 big potatoes - cubed
1 medium carrot (chop into 2 inch pcs)*
3-4 pcs debone chicken thigh (wash it with salt and cut into bite size)*not too tiny as it will shrink when cooked
Season the thigh with 2 tbsp of Jap curry powder  (*optional)

Carrots..*can be replaced with pumpkin which my elder sister did.

The How to:

1.Cube the potatoes and fry in oil till golden brown and set aside.

2. Fry the onion in oil till soft and add carrots stir fry

3. Add in the chicken pieces and fry till water dries up.

4.  Add the curry paste and break it up with spatula, it will dissolve when mixed with the chicken

5.Continue to fry and mix the ingredients well.

6.Add in water accordingly..can add more water if the gravy is too thick.

7. Stir in the fried potatoes at this point and boil a further 3 mins..serve hot with rice.
