Scotch Eggs 苏格兰蛋

Scotch Eggs
...a dish I first learnt when I was in secondary school...what a time to attempt making it, when you actually wanted to serve it as a surprise Christmas side when your secondary classmates aka buddies were to meet for a get-together..in fact we have since gathered over 40 years after graduation..💞💞💞💞💞

This post is for my buddies...Leng, Lan, Seok and Prof..

Ingredients at a glance..

Eggs 8 mini or first born eggs
500g of minced pork
1big onion - diced
2 tbsp mixes herbs
1 tsp black pepper
1/2 tsp chilli flakes
1 tsp salt
1 tbsp flour
1 pkt of breadcrumbs (panko) bought from ntuc @$1.90
1-2 eggs (for coating)
Plain flour (enough for coating)

Method:
1. Diced the onions and combine the minced pork along with the herbs, black pepper and salt..mixed well

2. Boil the eggs till cooked..hard boiled eggs ( peel them )

3. Take a spoonful of meat mixture roll into a ball and flatten it as thin as can be.

3.Wrap the meat round the egg and conseal the egg as much as possible. Pat the meat firmly and set aside untill all 8 eggs are done.

4. Gather the flour, beaten egg and breadcrumbs and start the 'factory' process..at this pointp

5. Coat the wrapped egg in flour and shake off access flour, next dip it into the egg mixture and finally into breadcrumbs.

6.Heat oil to medium hot and fry till golden brown.

7. Serve warm in a bed of lettuce with salad cream or chilli sauce.

Note: In case the oil temperature had gone way too high and you couldnt get the pork cooked thoroughly..no worries..pop it into microwave for a few minutes and then into Airfryer for a crunchy outer layer..

This blog is specially for my beloved buddies who tried the scotch eggs during our Xmas gathering...and Especially for Leng the Egg lover..(you inspired me into attempting this dish)..🥰🥰🥰🥰🥰
