Easy Potato Salad...with Roasted Garlic & Ham




Today attempt a level one all-time-favourite among my kids..Potato salad..
Potato salad is such an easy dish that I wish I knew how when kids were way younger..
Now they are carb-conscious but still making this once awhile will delight them. I had in my pantry 3 large potatoes, some left over top part of honey baked ham which I cubed and pan fry lightly. One clove of garlic which I roasted with olive oil in the Airfryer. 

Ingredients at a glance.. 

3 large potatoes
1 small rice bowl of cubed honey baked ham
1 clove garlic
3 tbsp mayonaise
1/2 tsp dried parsley
1 tsp ground black pepper
1/2 tsp sugar
2 tbsp fresh milk or evaporated milk if you have




The how: 

1. Microwave on high 15 to 20 minutes potatoes, checking it once awhile. (Score the skin in middle for easy removal when cooked) 

2. Place garlic in a plate, add a tbsp oil to garlic & roast for 20 minutes on high 

3.Pan fry cubed ham till lightly charred (watch out - slow heat preferred as honey will blacken the ham real fast) 

4. Soak potatoes in water before peeling off skin, roughly chop into chunks 

5. Add 3 tbsp or more of mayo and mix it around, then add 2 tbsp of milk, it will bind and give the mayo a sticky feel. 

6. Add in the ham, black pepper, sugar and toss, place garlic on top and sprinkle with parsley.. 

7. Eat it on its own or with a roast chicken..eat it the way you want it..😇😇
