Copy Copy Cat Famous Amos Chocolate Cookies
'Famous Amos' - Chocolate cookies that both kids and adults love. I shall call mine Copy Copy Cat Famous Amos....🤣🤣🤣
No..no..is not typo..I have a reason for calling this recipe thus..because I copied from Zoe - bakeforhappykids.com's (Thankful to Zoe, if you read her recipe, she really did a very comprehensive research on these cookies)
Had baked these years back but forgotten which recipe I used. (Maybe I had followed her first recipe then, because it turned out good too) but couldnt recalled....
I had googled many posts and finally found this which I thought should be very legit.

I had reorganised the measurement based on the usual 250g butter sold in supermarkets but it will yield a really big batch of cookies if you do not mind. Otherwise, half it.
Ingredients
Butter - 250g (Unsalted)
Shortening - 50g (I used pan yu (vegetable shortening from phoon huat, can be bought fr ntuc)
Dark brown sugar (muscovado) - 300g
Sugar caster - 150g
1 Egg - around 50g (usual big egg 55g)
Vanilla essence - 3 1/2 tsp
Plain flour - 500g
Baking powder - 2 1/4 tsp
Salt - 1 3/4 tsp
Choc chips - 400g (1 1/2 cup)
Method
1. Cream butter, shortening and sugar ( both castor and muscovado) together till pale around 5 mins
2. Beat the egg and add in bit by bit (about 3 rounds)
3. Combine flour, salt and baking powder (sifted) and add into butter sugar batch by batch.
4. Stir in gradually without over mixing it.
5. Stir in the chocolate chips and keep the dough chill for an hour (actually I did not chill when I did a test bake, it turned out well & crispy)
*so play by ear if you find the dough too soft, just by all means chill it a bit, otherwise just go ahead and bake it)
6.Preheat oven (I used Air fryer) 180 deg celcius and line baking tray with baking paper.
7.Bake for 15 minutes till done.
(It will be soft when still hot, handle with care and once cooled it will be so crispy)
8. Enjoy with a cup of Kopi O Kosong or milk.
(Note: my batch of dough is still in the fridge at point of documenting, I shall bake tomorrow and write about the outcome)...
The following morning....
Omg 😱😱 very hard when I took it out from fridge..but no worries after an hour it was ready to be baked..
