Kimchi Stew - Easy 30 minutes stew


 I was thinking of cooking a stew, Army stew , Chicken stew or Kimchi stew??

Kim Chi stew came to my mind..Given the limited time slot I had in the morning, I decided upon Kimchi Stew..(I have not cooked this for a long time)



My Kimchi stew...

This is a fairly easy and fast dish so I can confidently say, I did it in 30 minutes..


A look at the ingredients-

250g Pork Belly (sliced thinly)
1 -2 stalk scallions (slice)
1 box soft toufu (cubed)
1 1/2 cup aged kimchi (preferably) cut into smaller pieces
1 tbsp white miso mix with 1 tbsp water
1 tsp chicken powder
3 tbsp kimchi paste (*optional)
1 tsp chilli flakes
1 clove garlic finely minced
1 onion - sliced

Season pork a night before to save time and more flavourful stew

Method:
1. Slice belly pork thinly (around 2-3 mm)
*Easier to freeze it awhile before cutting

2. Season the pork with 3 tbsp of kimchi paste (bought from Donki) - can do night before 

3. Heat up 2 tbsp oil fry garlic, put in pork, brown it a little before putting in the kimchi, onions and add a dash of sesame oil, fry it for 5 mins till juice from kimchi emerge
(*crucial step is to fry the pork and kimchi)

4. Pour in water to cover completely the ingredients.(I usually add water along the way to determine how thick stew is)

5. Bring to a boil and add chicken powder and add paste if the stew is not flavourful enough

6. Lower heat and simmer a further 15 to 20 minutes
