虾仁煎蛋 ( Prawn Eggs)
Cooking another easy comfort food, simply if you have chicken eggs and prawns (fresh or frozen) both are fine.
Ingredients:
6 eggs
12 prawns or more ( optional)
1 stalk spring onion (chopped)
Pepper
1 tbsp soy sauce
1 tbsp sesame oil
1/4 tsp baking soda (optional)
Fish sauce
Oil for frying eggs
Method:
1. Beat the eggs and add in soy sauce, sesame oil, pepper.
2. Add in the baking soda, give it a good whip.
3. Add in the prawns and the chopped spring onions.
4. Heat up wok or non stick frying pan. Pour in sufficient amount of oil. Till it slightly smoke.
5. Pour in 2 ladles of egg mixture, be sure to include some prawns..
6. Swirl round the wok and it will fluff up nicely. Let it set and cooked till the other side is golden brown and crisp, flip over (handle with care as it will break in centre because of the weight of prawns) and cook the other side till crisp.
7. Just before dishing, squirt some fish sauce and it will immediately up the flavour, trust me.
8. Make a bigger batch, leftovers will be into sandwich the following day, time saver..
Note: You may try whipping egg yolks and white separately to yield very fluffy egg..egg white can fluff v well with just fork and a bowl..

Endless combination
Leftover eggs and prawns made into sandwiches with lettuce and a squirt of honey mustard..you can even toss in some flavoured seaweed or chilli flakes..endlessss...variaton🤣🤣
