My comfort food series - 2022/1/1 Pork lard rice 猪油捞飯
2022 has just begun..thought I should start a new series of food call Comfort food.
Definition of Comfort Food...
Food that provides consolation or a feeling of well-being, typically having a high sugar or carbohydrate content and associated with childhood or home cooking.
Everyone has their own form of comfort food, it maybe something that they had eaten when they were happy, sad or when they were young...the list goes on....
I will just post my kind of comfort food here and may you find a little comfort in reading and even trying the dishes out...Cheers
Specially dedicated to papa who loved this dish so much so that we will forbid him from eating due to his heart condition.
Glad that little sister gave him a meal of this when he was towards the end of his journey, he loved it so much..kept saying he had not eaten this for a long time😭😭😭😢😢
My first post/Comfort food/Pork lard rice..猪🐷油渣捞饭
Pork lard which is oil from pork fat, a comfort food that my siblings and I had eaten when in the 60s or 70s.
We had a neighbour who was a butcher, she would prepare the pork fats and fried them in our common kitchen. The heavenly smell never failed to capture us..and our neighbour who treated us just like her grandchildren would allow us to nibble on those fried, fragrant, crispy bits of 'tidbits'...unforgetable..❤❤❤
Here is sharing what I gave my family for dinner tonight...though not very healthy, eating with moderation, should not be a problem..
1. Enough of lard and fried bits of lard
2. Hot steam rice
3. Light soysauce or dark soysauce
4. Sunny side up or raw egg (pasturized)
How to:
1. Fry egg according to your liking
2. Scoop hot rice into bowls preferably as you will need to mix it up (in the case of using raw eggs, hence to avoid mess
3. Scoop 2 to 3 tablespoonful of lard over pipping hot rice, drizzle soysauce over the hot rice not forgetting to include in the 'lead character' of this dish- the fried lard (猪油渣)
4. Break the raw egg in, mixed into pipping hot rice, garnish with spring onions, eat heartily..
5. For sunny-side-up, do as step 4 and top rice with a fried egg, garnish with spring onions and add a dash of pepper and soysauce..
