Pasta de mama (Truffle oil stir fry pasta @ Aglio Olio)

Today I am going to share a pasta dish which my lovely friend Carol had asked me about.
Being a very action packed working mum with two active kids, I hope she will find this handy.
Being a working mum myself, with slightly older kids, I know exactly what is called preparing meals to the best we can, against how little time we have and making sure the meal will win the kids over..
Here is a simple dish, as I assured her, which she can add whatever she has on hand to create a pasta dish that suits her busy schedules.
Fresh tomatoes, cherry tomatoes, white button mushroom or king oystermushroom, the choice is yours..
Ingredients at a glance:
(Serves 4)
• 1/2 packet of sphaghetti
(cook according to package plus 2 mins)
• 1 packet of king oyster mushroom
• 1 to 2 sausages of your choice (Johnsville cheddar brats) - sliced
• 10 cherry tomatoes
• Handful fresh basil
• Mixed italian herbs
• Garlic - 1 clove sliced
• Olive oil
• Truffle oil (*optional)
• Chilli flakes
• 12 frozen prawns
The How to:
1. Cook pasta according to package in salted water plus 2 more minutes
2. Heat up 2 tablespoons of olive oil, brown the garlic and drain it.
3. Thinly sliced the oyster mushrooms. Half them before slicing if they are too big.
4. Half cherry tomatoes
5. Rolled up basil leaves and shred them thinly.
6. Fry the prawns till 80% cooked, put aside for later use.
7. Fry the sausages, put aside for later use.
8. Add in mushroom and fry till soft (if using white button mushroom, you will need more time as more water will surfaced as you cook them)
9. Season the mushrooms with salt, black pepper and herbs.
10. Add in the tomatoes, sausages, prawns and basil leaves. Give it a good fry, add some truffle oil to infuse the mushrooms
11. Finally add in pasta, stiry fry, test taste and add chilli flakes, salt, black pepper accordingly.
12. Before dishing up, add truffle oil and give it a good stir and add in some more chopped basils and also decorate with basil leaves if you have.
It can be a vegetarian dish if you omit all the meat....
Choose King Oyster mushrooms over white button mushroom for this dish as the latter emits a lot of water while cooking...
