咸猪肉粥@Salted pulled pork porridge (Comfort food series)

Salted pulled pork, pork balls porridge. Another comfort food series of my family.
Kids ate these growing up and it is super easy and fuss free.





A look at the ingredients...



1 cup rice (washed and freeze overnight or many nights)
250g lean pork  (entire piece to sesaoned with salt only) about 2 tbspoonful
250g minced pork
Few pieces scallops (optional)
2 stalks spring onions
1 pcs 2 inch ginger - sliced
Preserved mustard (冬菜)
Salt
Pepper
Light soysauce
Sole fish powder
Sesame oil

Extra seasoning for drizzle
Soysauce
Sesame oil
Fish sauce


Method:
1. Cook frozen rice grains in sufficient hot water (add water to the right consistency along the way)

2. Put in the entire seasoned lean pork and boil together till cooked.

3.Cooked till porridge is gluey and of the right texture (congee)

4. Seasoned pork with 1 tsp soysauce, 1 tsp salt, 2 tsp sesameoil, 1 tbsp corn flour, pepper, 2 tsp sole fish powder.

5.Mixed the meat well and add in chopped ginger, spring onions, form into balls (best chilled so the balls are firm)

6.After about half an hour (in microwave), stirring as we go along, put in pork balls (refer photo), gently stir into porridge till done..about 2 mins.

7.Garnish with spring onions, ginger, dash of pepper and the preserved veg (冬菜)
