Roasted Pork Spice salt Fried Rice (烧肉淮盐炒饭)
When you are caught between two loves, roasted pork and fried rice, you do not need to feel like a fool. Simply marry them, then you will know they turn out to be perfectly matched.
Happened to have a 200g piece of roasted pork on hand, neither here nor there, so decided to use it to fry rice.
Ingredients at a glance
1. Roast pork belly - 200g
2.Cooked rice -2 cups
3. 3 eggs
4. Spice salt (make own salt if dont have)
5. 1 cup frozen veg or 1 stalk leek or 2 stalks spring onion
6. 1 tsp chopped ginger
7.1 tbsp garlic
8. 1 tbsp of light soysauce / fish sauce
How to:
1. Slice roast pork thinly but at least 1.5 inch in width and also depending on the piece of meat you have, preferably the belly pork which is layered nicely and evenly so that slicing through (with very sharp knife) does not leave bits and pieces falling off.
2. Pre cook the rice but I did.mine on the spot, just use lesser water, it works
3. Fry some garlic and add the slices of.pork to pan fry till golden brown, medium fire preferred as it will harden the pieces. Add in ginger to the pork and fry till fragrant and crispy. Dish it up and keep for later use.
4. Put in 2 tbsp oil, break eggs 1 at a time and quickly scramble it. Add a dash of fish sauce.
5. Add in rice and mixed it quickly with scramble eggs. Continue to fry till well combine. Add in the mixed veg but if using the leek or spring onions, put in half the quantity first, needed the greens to enhance the presentation of dish later.
6. Add in the soy sauce from rim of wok and fry further. When almost done, add in the roast pork and sprinkle spice salt to fry and taste it till the desired flavour of your liking..
7. Dish up and enjoy.
* Note
Simple home made chinese spice salt - 20g salt..30g five spice powder.
Dry wok heat it up, fry the salt for a while and add in five spice powder, fry till dry on low medium heat for 10 mins..cool it and store in glass jar.
