Chicken Rice - 鸡饭 (Lazyman way)



Today, I am going to share this simple chicken rice recipe that anyone can whip at home..
With the recent spate of shortage of fresh chicken imports, everyone I know scrambles to somehow try to eat fresh chicken meal before it goes 'extinct' 🤣🤣🤣🤣

And reports about supermarkets shelves being wiped out of fresh chicken parts is too ridiculously kiasu..

Here I am to share with you a simple recipe using frozen wings and microwave oven to curb your crave for 鸡饭 in case you really are craving for...🤣🤣 and it costs less than 20 bucks and under an hour from prep to done..

Chicken Rice paste
Salt bake powder
Good chilli sauce

Ingredients @ a glance

3 cups rice (washed & drained)
3 tbsp or more of chicken rice paste (dont be stingy on the oil in the paste, trust me)
1 packet mid wings (soaked in salted water for 1 hr if have time to rid frozen taste)
4 blades of pandan leaves
5 cloves of garlic
1 knob of ginger
1 packet of veggie of your choice

Marinate wings
3 tbsp of salt bake chicken spices
1 tbsp shao xing wine
1 tsp sesame oil
2 tbsp ginger juice


Method

1.  Mix chicken rice paste into drained rice, add in the knotted pandan leaves, smashed the knob of ginger and throw in all the garlic, add the usual amount of water and cook in microwave for 20 mins or according to your timing 

2.   Marinate chicken with salt baked chicken spices, wine, sesame oil and ginger juice. (Leave it seasoned for at least an hour or overnight if you have a world of time).
Microwave for 15 minutes or less, covered and till done, it turned out like steam chicken..very doable way of time saver cooking...trust me..did this too many times..

3.   It is all done..Unbelievable...😲😲😲

4.   Clean veggies accordingly and blanch them for 1 minutes to retain crunch.
Add oil, oyster sauce and a bit of soysauce, mixed and set aside.

Succulent wings 
Crunchy greens, if you have lard, use that instead of oil, more flavourful
Chicken rice meal without soup, usually I will cook cabbage or bai cai chicken soup..
