Egg Mayo Sandwich
Egg mayo, something that is so simple and yet so delicious. Had always wanted to try achieve the perfect creamy, spreadable layer of egg mayo on soft fluffy bread..finally found a recipe that fits my description..it is from Just One Cook Book ...shall share her recipe here...
Ingredients at a glance
4 eggs (60g per egg)
3 tbsp of mayo (Kwipie)
1/4 tsp sugar
1/5 tsp salt
1 tbsp butter
1 tsp milk
Black pepper (amt up to personal preference)
Method at a glance
1. Boil egg for 8 to 10 minutes (put eggs in when water is at room temperature)
2. Remove eggs from hot water and immerse immediately into tap water to bring down heat and also for easy removal of shell.
3. Put eggs in a deep bowl and cover with a flat plate, give it a good shake, the shell will crack and thereafter easier to remove.
4. Put eggs in a bowl and smashed it with a fork, do not smash too much, such that you can still eat bits of the eggs.
5. Add in the mayo, salt, pepper and butter, mix well..
6. Prepare a loaf of bread and spread the mayo, can add a bit of lettuce for fibre..
7. Enjoy!!!
