Home style chicken stew - comfort food series..Nothing beats a bowl of chicken stew with bread or rice..

Learnt this from my girls when they had compulsory cooking classes in lower secondary..during their teen days we ate a lot of this..revive this dish today as this can be something easy to cook...


You will need some carrots, potatoes, big onions and a can of mushroom (whole), green peas, chicken , flour and seasonings

Carrots - 3 medium ( cut into chunks)
Potatoes - 3 large ( chunks)
Onion - 1 large ( Wedges)
Chicken.fillet - 6 pcs or 1 whole chicken breast or 2 debone skinless thighs (bite size)

Method
1. Fry the onions in a tbsp oil till soft and fragrant.
2. Add the chicken pcs and fry till slightly charred.
3.Add a 1/4 tsp salt..1 tsp pepper or more and some italian herbs ( optional) .Fry further till fragrant. ( add 2 to 3 tbsp of flour) to coat chicken pcs ( just mix well). Add potatoes, carrots and stir fry a bit.

4. Add enough hot water to just above the vegetables. Boil at high and bring down temperature, simmer till carrots and potatoes turn soft.

5.Add a full tsp of chicken powder and 1 tbsp of oyster sauce, 1 tbsp of worchester sauce (optional) but good to hsve.

6.Bring to a boil, test the taste and adjust accordingly.

7.Serve hot with rice or bread.
