One pan meal - Pan fried Chicken chop with Veggies
Hi all, just want to share something I found so easy to cook if you run out of time and ideas.
A one pan chicken, potatoes, mushroom meal. It is so super easy that I guess my kids can have it thrice a week 😄😄
I prefer to get my boneless chicken from the market as I usually cannot get fresh ones in supermarket.
Here's a look at the ingredients
2 pcs Chicken thigh (Boneless) skin on
2 big potatoes
1 medium carrot
1 stalk scallion (optional)
10 mini king oyster mushroom or 2 stalk medium ones
1/2 big onion (wedged)
2 eggs as side for sunny side up
Some greens for balance diet
Oil - you only need a little or not at all (depends)
Here's the how
1. Sesaon chicken with 1/2 tsp salt or chicken powder, 1/2 tsp white pepper, 1/2 tsp sesame oil and 1/2 tsp oystersauce (you can sprinkle salt later if you prefer a saltier meal but I suggest to go for natural flavour) , marinate for at least 20 minutes, best over night.
2. Peel potatoes, carrots and cut them in chunks. Onions just cut into wedges.
3. Slice diagonally the scallions
4. Rinse mini king oyster mushrooms and pet it dry. Half them .For bigger mushrooms cut away bottom hard stems and half them, then cut into thick slices..
5. Heat up a non-stick wok till hot, skin down and pan fry the chicken pieces for 5 mins high medium fire, check for crispiness, I usually will flip side at 5 mins as oil from chicken skin will give the meat side a good sear.
6. Fry meat side for 4 minutes ( pressing the thicker meat cuts with spatula), flip back to skin side and continue to brown it further..@ 10 mins cooking time, check that no juice from chicken sips out, dish it up if you are just doing a chicken chop.
But I continue to let it crisp as I am cooking a one pan meal
7. At the 5 mins searing of chicken skin, oil will be released from chicken skin, depending on how much fats released, I will throw in my onions, potatoes, carrots and mushrooms.
7. Spread them out evenly to prevent soggy veggies as we need the oil to bake the veggies. ( cover partially as we need the steam to speed up cooking the potatoes and carrots)
8.Lastly throw in scallions and cook it for 3 mins. Dish up and serve.
9.Optional to fry a sunny side to enhance the meal.
I am a very visual person, I love my food colorful but it can be 'dangerous' it whets your appetite.🤣🤣
My kids grew up in such environment, I always make sure their food appeals to them with different color combo.
