Easy 15 minutes Assam Fish

ASSAM FISH....

Assam Fish has never been easier ever since I found the short cut. No joke, wished I knew it earlier as my late FIL is a big fan of Assam Fish..😪

Trust me I had been using this ready made assam paste for the past 10 years, it has never failed me.. So easy that it can be done like in 10 minutes ....


Quick look at the hows and the what...


What ingredients:

1 pkt Ikan brand assam pedas ikan paste
1 piece of boneless white fish fillet (my usual choice seabass, tapan or saba fish)
1 -2 medium brinjals
6-7 lady fingers
3 large tomatoes
1 big red/brown/yellow onion - wedged
Parsley and Spring onions


How to:
1. Wash all vegetables, brinjals, lady fingers or okra and tomatoes. Cut into bite size (brinjals), okra into 2 cm chunks, tomatoes chunks. Spring onions into 2 inch stalks.

2. Wash and pat dry fish fillet, steam the usual way but do not overcook as you still slide into gravy to further cook it. I always use my trusted microwave steamer, 2 to 3 mins..

3. Steam the okra for 1 to 2 mins, it turns bright green set aside

4. Pour packet of assam paste into wok or pot, add the amt of water stated on packet (200ml) cant recall but will update when I read packaging again. Put it to a boil.

5. Put in the brinjals and tomatoes to boil till they just turned soft or to the texture that you prefer.

6. Slide in fish, careful not to break the fish, boil a further 2 minutes and add in the okra, boil for 1 minute.

7. Garnish with spring onions and parsley, serve with steaming hot rice.

Note: Test the gravy, optional to add a 1/2 tsp sugar to tone down the sourness..
